Bar Ticket Times: Benchmarks, and How to Actually Measure Them

A bar ticket time is the elapsed time from a drink order being rung into the POS to that drink reaching the guest. On a slow night a well-run bar delivers in one to two minutes; on a packed Saturday, up to around ten; cocktail-forward rooms run longer than beer-and-pour concepts. The catch is that most operators have never seen a true bar ticket time: the POS records the ring and the KDS records the bump, but nothing records the moment the drink lands — which is the only timestamp the guest experiences.

“Bar ticket times” is the phrase operators actually say out loud — on the floor, in ops meetings, in the group text when Saturday went sideways. Search it, though, and you get sports-bar listings and last-call trivia. Nobody has bothered to define the metric, benchmark it, or explain how to measure it. So here's all three.

What counts as a bar ticket time

The clock starts when the drink is rung into the POS — by a server firing a table's round, or a bartender ringing a bar-top guest. It stops when the drink is in front of the guest. Not when the ticket prints at the service well, not when a bartender bumps it on a screen: when it lands. That last leg — the finished drink sitting at the well waiting for a server pickup — is routinely where a third of the elapsed time hides, and it's precisely the leg no system records.

Bar ticket times are not bar turn times. Turn times describe throughput — how quickly seats at the bar top turn over. Ticket times describe latency — how long each individual order takes to arrive. A bar can turn seats briskly while quietly running six-minute ticket times that cap every table's second round.

Treat these as sanity ranges, not standards. The useful number is your own distribution by daypart and station — a bar that averages four minutes but throws fifteen-minute tickets every Friday at 8pm has a staffing or expo problem the average conceals.

Why your POS has never shown you this number

The POS timestamps the ring. A bar KDS or printer timestamps the bump — the moment someone at the well pressed a button or tore a ticket. Between and after those events sit the parts guests actually feel: the queue at the well, the build, and the hand-off leg where a finished drink waits for a runner. How to measure bar ticket times by hand
